WHAT YOU WILL DO AT BIHC
Reporting to the Head of Culinary, the Executive Pastry Chef is responsible for leading the pastry kitchen operations, including menu creation, production, quality control, and staff management. You will oversee the preparation of a wide variety of baked goods, pastries, desserts, and confections while ensuring consistency, innovation, and adherence to hygiene and safety standards.
This role requires creativity, attention to detail and strong leadership skills to ensure that all pastry offerings meet the standards of excellence.
As an instructor, you will be responsible for coordinating and teaching several courses with the option to design your own course within your chosen area of focus.

YOUR KEY RESPONSIBILITIES:
  1. Operate and manage the pastry section of a kitchen, working together with the other chefs
  2. Prepare a variety of baked goods, decorate and present pastries offerings and baked goods in a tasteful and contemporary way and use of both traditional and modern recipes.
  3. Meet with customers to discuss custom-made desserts or baked goods for special occasions
  4. Ensure the bakery section of the kitchen adheres to health and safety regulations
  5. Develop new seasonal recipes and menus and keep up with the latest trends
  6. Create new and exciting desserts to renew the BIHC  menus and engage the interest of learners and customers
  7. Decorate pastries using different icings, toppings etc. to ensure the presentation is of a professional nature.
  8. Schedule staff, delegate tasks and oversee the workflow of the Pastry kitchen.
  9. Monitor stocks for baking ingredients and make appropriate orders within budget
  10. Maintain a clean and orderly cooking station and adhere to health and safety standards
  11. Teach at a diploma level in areas allocated by the Head of Academic Affairs
  12. Contribute to the development, planning and implementation of a high quality curriculum
  13. Prepare learning materials, schemes of work and maintain records to monitor students’ records, achievements and attendance.
  14. Participate in departmental and faculty seminars aimed at building inter-disciplinary collaboration within the department.
  15. Participate in the development, administration and marking of exams and other assessments
  16. Provide pastoral care and support to students,
  17. Network with other pastry chefs within the hospitality arena
  18. Any other duties as may be assigned by management

THE SKILLS AND COMPETENCES WE ARE LOOKING FOR:

  • Physical strength and stamina to spend long hours standing and performing repetitive motions
  • Flexibility, since hours for a Pastry Chef may vary and include weekends, evenings and holidays

Minimum requirements on Education and Experience:
  • Diploma in related field of study/Baking & Pastry. Bachelor’s Degree in Areas of Specialization/related field of study or Pastry Arts will be an added advantage.
  • 5-10  years  proven experience in five star international hotels, managing the pastry and bakery section, teaching experience would be an advantage
    Proficiency in Microsoft office suites especially PowerPoint
